Sweet Potato and Asparagus Bake

photo(7)This is a really fun and easy thing to make.

I was coming to the end of my veggies for the week. I wanted to do something easy because the girl were napping and I wanted to start dinner.

Here is a simple recipe for something healthy and quick:

  • 2-3 sweet potatoes cut up.
  • 7-10 asparagus stalks. 1/4 in cut
  • olive oil
  • salt, pepper, and a dash of cinnamon
  • casserole dish

Pre-heat the oven to 350 degrees.

In a large mixing bowl, add the olive oil. I did about 2 1/2 tbsp. You can do a little more or less depending on taste. You just want the veggies coated enough.

Add the veggies, salt, and pepper.

Mix everything up with your hands and make sure everything is coated well.

Add the veggies to your casserole dish.

Sprinkle a dash of cinnamon on the veggies.

Bake in the oven for about 30-35 minutes. Check if the potatoes are done by piercing them with a fork.

Serve and enjoy!

  • I am going to make this again, but with some changes at the end of the Whole30! Just you wait!
