My Breakfast!!! Oh So GOOD!

This is one of my favorite things to eat for Breakfast on the Whole30. It is really easy to make!

  • 5-6 stalks of asparagus
  • smoked salmon (read the ingredients! Some have sugar!)
  • 3-5 eggs
  • salt, pepper, red pepper flakes
  1. Heat about 2 tbsp of coconut oil in a skillet on medium heat.
  2. Cut up some asparagus in about 1/2 inch pieces.
  3. Once the oil is hot enough, toss the asparagus in the skillet.
  4. Season with salt, pepper, and red pepper flakes.
  5. Cook for about 4-6 minutes. I like mine crispy still.
  6. Remove from the skillet and plate.
  7. In the same skillet, crack 3-5 eggs into the skillet.
  8. I love over easy eggs, so that is what I do. Also, the eggs are going to get some of the leftover spices from the skillet.
  9. While the eggs are cooking, place 3-5 pieces of smoked salmon on the top of the asparagus.
  10. When the eggs are done, place above the smoked salmon.
  11. Eat and enjoy. (If you want to spice it up a little more, add some hot sauce like Cholula!)
